  BAKED BRIE IN PHYLLO

3 sheets phyllo dough, thawed
3 Tablespoons Olive Oil
1 (8 ounce) round Brie
Cup Pepper Jelly

Preheat oven to 350 degrees. Place a sheet of phyllo dough on a flat surface. Brush 1 tablespoon of olive oil. Lay a second sheet ontop of the first, and brush it with a tablespoon of olive oil. Place the third sheet on top. Cut small even squares of dough, enough to fill small the cups in a mini muffin tin. Line each mini muffin tin cup with the 3-ply sheet of dough. Layer a small chunk of brie and a dollop of jelly.

Bake at 350 for 15 minutes or until the dough is golden.
